Eggplant Lasagna

For today's lunch or dinner, I have decided to create an Eggplant Lasagna. My kitchen is still under renovation, taking more time then expected, but I am sure I can manage!

Make sure first you have the below ingredients (preferably Organic):

Raw Organic Ingredients:

Veggies:                                
Eggplant (need to be marinated) **See below
Zucchini
Red Onion
Tomatoes
Sun dried tomatoes
Jalapeño Pepper
Garlic clove

Liquid:
Nama Shoyu or Tamari sauce
Water
Olive Oil
Tahini
Apple Cider Vinegar

Sweetener:
Honey or 2-3 Pitted Dates

Dried Herbs:
Italian herb mix (a mix of basil, thyme, oregano, and garlic)

Fresh Herbs:
Fresh Basil

Others:
Sea Salt

Equipment:
Vita-Mix

Preparation:

First Phase:
1 medium to large eggplant
2 cups water
1/4 cup nama shoyu, or tamari sauce 

1 tsp. sea salt 
Eggplant Slices
Marinated Eggplant

Cut eggplant thin lengthwise. **Marinate in water, nama shoyu or tamari sauce and sea salt for at least 2 hours, and up to 12 hours. Dry the eggplant slices with a paper towel.



Second Phase:
Prepare the following in separate bowls:
1 cup Better Than Mom’s Tomato Sauce*** (See below) 

2 cups shredded zucchini
a few slices of red onion

Slices of Red Onion













Third Phase:

Cheese sauce:
1/3 cup tahini
1/3 cup olive oil
2 Tbsp. nama shoyu, or tamari sauce

Mix together in a bowl until smooth.

Final Phase:
Create different layers, alternating:
Eggplant, tomato sauce, shredded zucchini, cheese sauce, eggplant, tomato sauce, etc. Finish with shredded zucchini, and decorate with a few slices of onion. Serves 2-4.

***Better Than Mom’s Tomato Sauce
3 cups tomato, diced-
4 Tbsp. apple cider vinegar
1 Tbsp. honey, or 2-3 dates
1/2 to 3/4 tsp. sea salt (to taste)

1 Tbsp. Italian herb mix (a mix of basil, thyme, oregano, and garlic)
1/2 cup fresh basil, or 2 Tbsp. dried
1 1/2 cups sun-dried tomatoes
1 tsp. jalapeno pepper

1 medium garlic clove

Blend until smooth. If you do not have a Vita-Mix, you will need to soak the sun-dried tomatoes in water beforehand. Soak them for a few hours, then discard the soak water. Makes 2 cups.

I am really proud of myself, my "Un-cooking" Journey is really starting! Can't even believe it!
