Thai Coconut Soup

My second recipe for today is the Thai Coconut Soup.
I just had it, and it was super delicious, you'd better try it... I have saved some for tomorrow.. I will just add a salad with it.





Raw Organic Ingredients:

Greens:
1 cup cilantro, or parsley

Veggies
1/2 avocado
1 medium garlic clove


Fruits:
1 cup tomatoes
 
2 cups young coconut meat 
Water:
2 cups coconut water

1 1/2 cups water
 (I used hot water)
Spices:
1 inch fresh ginger

2 pinches cayenne pepper, or to taste

Other ingredients:
2 Tbsp. mellow miso (optional)

1 Tbsp. garlic-flavored flax seed oil, or olive oil 
1/2 tsp. sea salt

2 Tbsp. namashoyu, or tamari sauce
Last two ingredients
1 cup tomatoes, diced

1/3 cup onions, chopped
Equipment:
Vita-Mix or a good blender

Blend all ingredients except for the last two and the cilantro or parsley
Then add the cilantro or parsley, and blend briefly, so it is not entirely liquefied. Pour into a bowl. Add the last two ingredients and mix well. Add more cayenne pepper if you desire the soup to be spicier. 
Serves 4
